SAUTÉED SPINACH
1 package frozen, chopped spinach, thawed
or
2 bags fresh spinach, washed
2 teaspoons olive oil
1 clove garlic, roughly chopped
salt and pepper, to taste
1.Heat olive oil and garlic in pan over medium heat, until garlic turns very lightly brown. Be careful not to burn it.
2.If using frozen spinach, squeeze out excess water and add to pan. If using fresh spinach, simply add it to the pan.
3.Cook, stirring occasionally, until spinach is totally wilted and dark green.
4.Season with salt and pepper.
5.Serve.
